Hunt Gather Talk PodcastTold you I was going somewhere new in 2016. Welcome to the first episode of the Hunt Gather Talk podcast. I plan on publishing a new episode every week or so, on all sorts of topics that have to do with wild food, current events in that world, interviews with other fish, game and foraging experts, tips and tricks and techniques for wild foods, and, in this first episode, I answer reader and listener questions.

In this episode I talk about hanging game birds, gathering seaweeds, making venison stock with deer bones, and storing fresh fish for optimum flavor.

For more information on some of these topics, you can go to these articles of mine:

  • Hanging game birds
  • Gathering seaweed
  • Venison stock

You will eventually find an archive of all my episodes here, and you can subscribe to the podcast here via RSS.

Just got the announcement that you’re reviving the podcast and thought I’d catch up on the original series. You put out some great information here and, if this is any indication of what to expect from the rest, I am anxious to listen to them.

I listened to you talk on The Hunt Backcountry Podcast and wanted to let you know I really enjoyed it. I am a hunter, fisherman, forager for wild mushrooms, and I process and cook my harvests myself. I consider myself a decent cook (at least I don’t flip steaks with a fork), but am by no means a chef; I learned so much in just an hour of listening. It was great to get a little insight into your world and experiences. I am even more excited for the upcoming hunting season because I want to try out some of the tips I picked up from you. I look forward to digging into your website and reading your books. Thanks again from a fellow hunter and food lover.

My wife and I are getting into self-sufficiency, farming, foraging and all the fun stuff that goes with that(including bee keeping, which is a blast!). Heard about your blog on one of Francis Lam’s Splendid table episodes and came directly to see what you were all about. I’m super excited to hear what you have to say and to try out some of your recipes. I like your style!

Started going through your podcasts and have found everyone so far to be more than worthwhile. In this one your explanation of why we have to keep fish colder than game makes so much sense! Never thought about that before.

Any chance of “Hunt Gather Talk” being added to Tunein Radio?

Hank Shaw holding a rod and reel in the American River

Hi, my name is Hank Shaw; I’m a James Beard Award-winning author and chef. I started this site back in 2007 to help you get the most out of all things wild: fish, game, edible wild plants and mushrooms. I also write cookbooks, have a website dedicated to the intersection of food and nature, and do a podcast, too. If it’s wild, you’ll find it here. Hope you enjoy the site!
