I’d like to try cooking spec legs in a pressure cooker (instant pot). Do have any recommendations in terms of recipes and time in the pressure cooker?

Hello, I live in Alaska and only use wild game and fish for cooking. I simply adapt any recipe that I find in common cook books. HOWEVER my husband is allergic to onions, and I need to additionally find ways to eliminate onions (and shallots, chives and leeks, but NOT garlic thank goodness). I am always on the hunt (as it were) for recipes that are great without onions. Not all thingz can go onion-less. I am visitng friends in Arizona and have turned me on to your BuckBuck Moose book I lok forward to trying these out. Will let you know how tehey workmout without onions!

Hank, I wish you would come to North Carolina soon. Have you ever considered presenting during the Southeastern Wildlife Exposition in Charleston SC? Or the Charleston Food and Wine Festival? I’m trying to get you in the Carolinas! Your books (I own 3) and website are just fabulous for those of us who hunt. I’ve recently made ham from the boar I shot, and am going to brine more tonight in preparation for a wild game dinner we share with friends. Needless to say, I am a big fan of yours as is my husband!

I recently found your FB page and subscribed to your newsletter, while looking for a recipe for duck breast. I’ve never cooked duck before & although I think I’m a well rounded cook, I’ve less experience with wild game. My neighbor recently gave me some frozen duck breasts, but they are ?WITHOUT? the skin. I’d be very grateful for your suggestions.
