Hey Hank, Got myself a few Canada geese in the last few days. I want to try out the Spickgans recipe as my mother is from Germany and always talks about how much she loves goose. Im fairly sure she will love the smoked method, I was thinking alder. Anyways quick question on the netting for the breast, what size to use for your typical large honker. Thanks

Hank, Got a question. What would you say is the best way for preserving home made dry aged salami? Just vacuum seal full salamis and no fridge? Or, fridge? You must have overstock. What do you do to preserve your cured meats and hard salamis? Thanks bro!! Much love ??

Phil, The smallest netting size I have is #12. It works well on a good size goose breast.
