Thank you Hank for your excellent directions re: shelling black walnuts. I know where I can get cured ones for two bucks a pound. I’m I vegan and so I don’t bake desserts often. Would you please let me know, when and if you have a chance, if they are good to eat right out of the shells? Thank you again, Linda

Hi Hank, I am looking for a recipe to make homemade sausages out of my ducks. however I don’t eat pig meat. All the recipes I have come across use pig fat/meat. I include all the fat from the ducks but it’s never enough. Can you recommend a substitute for pig meats.

Deb: Yes, use beef or lamb fat. Or make an emulsified sausage (like a hot dog) with all ducks, including the fat. They are harder to make, but will work.
