I wasn’t sure I’d be able to get to do a duck hunt & duck cooking school this winter, with all the book touring I’d be doing. But I am happy to announce that not only will I be able to do it, but I will be hosting the 2017 duck school in one of the capitals of all duckdom, Arkansas!
I’ll still be working with my friend Larry Robinson of Coastal Wings Outfitters, but this school will be near Stuttgart, Arkansas. It runs from January 12th to the 15th, and, like the other schools, will be 3 hunts — rice and flooded timber — plus I’ll be cooking you fantastic dinners and working with you during the afternoons to help you get the most out of your birds. We’ll cover plucking, hanging, breaking birds down, how to use everything but the quack, cooking techniques both basic and advanced, you name it.
This school will be larger, too. We can take 15 hunters instead of the normal 10. Part of the reason we can take more hunters is because we have more guides — including my girlfriend Holly Heyser, an expert waterfowler who works for the California Waterfowl Association. And while we always welcome women hunters, Holly’s arrival gives us a special opportunity to work with women waterfowlers. She’s great with experienced hunters, and even better with newbies.
You arrive the first day in the afternoon and we get you settled in and serve you the first of several duck dinners. You hunt early the next morning, and afterwards I walk you through plucking, skinning, processing, hanging birds — all aspects of getting a bird from field to kitchen. The second night will be another fine dinner, followed by another morning hunt. The second afternoon, we talk duck cookery. All topics are on the table, and there are no dumb questions. (OK, maybe a few… ) The final day we hunt one more time, clean your birds and get you on your way.
As always, we welcome both experienced and new duck hunters, although we do require you to have your hunting license, basic gear, shotgun and ammo before attending.
Cost is $2,250 per hunter, which includes three hunts, three nights lodging, all meals (dinners cooked by me), all classes and a signed copy of my waterfowl cookbook Duck, Duck, Goose. (If you already have this book, let me know and I can bring you one of my other books.)
