I would very much invite you to explore Austria and Germany for recipes that pertain to venison. I recently shot a 200-pound whitetail (field-dressed) and would like simple recipes on fixing it. Also, I have become an expert on brining wild fowl, such as turkeys and ducks, if you ever need some thoughts/help in that regard. Looking good, Hank!
